Vegan restaurant cookbooks can be inspiring but demanding. To recreate these dishes from Seattle's Plum Bistro-elegant creations like Fig Crepes with Ricotta, Arugula and Agave Balsamic, and Roasted Yam Ravioli with Apple Tempeh Fillets and Chanterelle Cream Sauce, clearly identified when gluten or soy free-readers will need a powerful blender and an arsenal of meat and dairy substitutes. Many of the ingredients lists reference basic recipes from the first chapter. VERDICT This will please fans of high-end vegan food, but the Candle 79 Cookbook, which includes a homemade seitan recipe, cocktails, a glossary, and a list of resources, is a better choice.
